– LEGUMES | BAKLIYAT –

Legumes (beans, peas and lentils) have been a food staple for over 20,000 and are featured heavily in Turkish Cuisine. Legumes are a prominent ingredient in soups and salads. Red lentil soup, mercimek çorbası, is perhaps the most popular soup and is common throughout Turkey. Simple salads featuring white beans are a common starter. In addition to being served in soups and salads, chickpeas are made into hummus. Fava beans are made into fava, a typical meze. Barbunya, cranberry beans, are often served with rice.
