Artichokes (enginar in Turkish) are native to Mediterranean and grow abundantly in Turkey’s Aegean and Mediterranean regions. Although artichokes are available all year, the peak season is April. In the spring, small carts pop-up on street corners throughout the country where farmers sell fresh artichokes. The street vendors skillfully peal the artichokes and place them in lemon water to prevent browning.
