Quince, ayva in Turkish, is a close relative of apples and pears. Although inedible raw, due to hardness of the flesh, quince is commonly used in both sweet and savory Turkish cuisine. In season from September to January, ayva tatlısı (stewed quince topped with clotted cream) is a popular winter dessert. Grown in the Aegean, Marmara and Mediterranean regions, Turkey leads the world in the production of quince.
